本週似乎是由於之前沒空在廚房東摸摸西摸摸所以過度興奮的做了好多東西喔。天氣又突然變冷,讓我深怕秋天就離要去了,所以做了好多南瓜相關產品。
這次的南瓜泥採用LF贊助的有機產品!驚人的是跟Libby's (非有機但是我一直以來都使用它,特價的時候還會囤貨喔!)差很多耶!顏色,口感都不同。今天挖的時候大驚,竟然是微微膠狀(軟羊羹感)而不是Libby's的泥狀耶.而且Libby’s的嚐起來南瓜味比較重一點,但是略甜一些。
今天就在和RCSIII邊聊天邊慢慢做著今天的早餐。但是他竟然和我媽媽合力做出 red bean pancake (紅豆美式煎餅),又讓我忌妒了一下。煩耶!可惡。下禮拜要做。

充滿Fiber,相當健康喔!
Ingredients:
1. all-purpose flour - 1 cup ( I used 1/2 cup all-purpose & 1/2 whole wheat flour)
2. quick cooking oate - 1 cup
3. brown sugar - 2 Tbsp
4. baking powder - 2 tsp
5. ground cinnamon - 1/4 tsp
6. nutmeg - 1/8 tsp
7. salt - 1/2 tsp
8. milk - 1 cup (I used 2%)
9. egg - 1 ( I used 2 egg white)
10. pumpkin puree - 3/4 cup
11. vegetable oil -2 Tbsp (I forgot to add it! oops!)
12. chocolate chips - as much as you want!
Directions:
1. Combine all dry ingredients (item 1-7) in a bowl.
2. Combine wet ingredients (item 8-12) in another bowl.
3. Add dry ingredients to the wet ingredients and mix to combine.
4. Let it sit for 15 minutes! (great time to enjoy a cup of morning coffee!)
5. Cook the pancakes! Make sure the flame is small and it cooks all the way through!
The batter may be a little thick (remember I forgot the oil), but don't try to add more milk if you still want to taste the pumpkin. Or you have to change the portion altogether.
I added the chocolates on top after I scoop the batter into the hot pan.
I also used a 1/4 cup to portion out the batter.
I flip the side so that I can see the chocolate chips!
This recipe makes 8 medium-large size dense pancakes. They are filling!
